{recipe} Broiled Buffalo Wings

I never liked Buffalo wings that much, but then I married a guy who can’t get enough of them. Tired of paying 10 bucks for a plate of what were clearly frozen Costco wings dressed up on a restaurant plate, I decided it was time to try and make my own. And boy, am I glad I did.

When I was looking for recipes to give me inspiration, I was appalled to find that so many of them listed “hot sauce” as an ingredient without specifying what brand of hot sauce. Are you kiddin’ me? The brand of hot sauce is probably the most important thing about the whole recipe! And there is one brand that is the official, the original, the one from which the very Buffalo wing was invented, or so they claimFrank’s Red Hot. The second most important thing is melted butter. Not important? Frying the wings. You can get an even tastier wing by broiling them in the oven. Plus, you can broil the wings in the sauce, then coat them with a little extra sauce when they come out of the oven, for a double saucing.

Recipe: Oven-Roasted Buffalo Wings
serves 6-8 as an appetizer

INGREDIENTS:

  • 2 lbs chicken wings, split
  • 1/4 cup Frank’s Red Hot sauce
  • 1/4 cup melted butter
  • 1 tsp garlic salt
  • 1 Tblsp smoked paprika
  • 1/2 tsp chipotle powder or cayenne
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • blue cheese dressing and celery for serving

METHOD:

  • Combine all ingredients except chicken wings in a bowl. Reserve about 3 Tblsp of the marinade for coating wings after cooking.
  • Put remaining marinade and wings in a plastic zipper bag and marinate for 1-2 hours.
  • Turn broiler on “high.” Put wings in a roasting pan in a single layer. Place wings about 4 inches from the heat source.
  • Cook 10 minutes, then flip wings over and cook another 10 minutes.
  • Remove from oven and toss hot wings with reserved marinade.
  • Serve immediately with celery sticks and blue cheese dressing.
