{recipe} Soft Pumpkin Spice Cookies with Brown Sugar Glaze

Pumpkin spice season – amirite? Now I have never been a big fan of pumpkins in my lattes, oreos, tampons, and so forth… but a delicious fall cookie? That is what pumpkin was made for.

These soft pumpkin cookies are super cake-y and tender, with a decadent brown sugar glaze, and I basically can’t stop eating them and now I’ve negated all the working out I did today but that’s beside the point. Because PUMPKIN SPICE!

You can brush the glaze on but I just kind of spoon it on in a drizzle because I’m lazy. Also that means more glaze on the pan for me to swipe up with my finger as I clean up.

Important: if you don’t want lumpy glaze, sift the powdered sugar before adding it to the pan.

RECIPE: Soft Pumpkin Spice Cookies with Brown Sugar Glaze
makes 3-4 dozen

INGREDIENTS:

for the cookies:

  • 1/2 cup softened butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar, well packed
  • 1 egg
  • 1 cup pumpkin puree
  • 1/2 cup unsweetened applesauce
  • 1 tsp vanilla
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 3 tsp pumpkin pie spice or 7 spice 
  • large pinch of salt

for the glaze:

  • 2 Tblsp butter
  • 1/3 cup brown sugar, lightly packed
  • 3 Tblsp milk
  • 1 1/4 cups powdered sugar

METHOD:

for the cookies:

  • Heat oven to 350 degrees F. Prepare baking bans with parchment paper and set aside.
  • Cream butter and sugars in a stand mixer with a paddle attachment.
  • Add egg, pumpkin, applesauce, and vanilla. Mix well to combine.
  • Add dry ingredients and mix to combine.
  • Drop by heaping tablespoons onto the prepared pans. Bake 11-14 minutes, until browned on the bottom.
  • Cool on a rack to room temperature.
  • Drizzle with glaze and let set before serving.

for the glaze:

  • Put butter and brown sugar in a small saute pan and heat to boiling. Boil, whisking constantly, for about 30 seconds, until light and thick.
  • Turn off heat. Add milk and whisk in. Whisk in powdered sugar. Turn heat back on and cook, whisking, about 1 minute.
  • Drizzle or brush on cookies immediately as glaze will harden quickly.
