{recipe} Easy Cake Mix Christmas Cookies

Did you know you can make super easy and tasty cookies out of cake mix? Well, now you do! And you can dye them green and decorate them with red sprinkles to make them holiday-ready.

I made these because my son was dying to bake cookies, and I found my cupboards woefully bare, save for a solitary yellow cake mix. All you need is a couple of eggs and some vegetable oil- and food coloring and sprinkles, if you’re so inclined- and you get soft, tender cookies in 10-15 minutes. It sounds a little weird, but trust me on this one – these got rave reviews all around, and no one could believe they were made from cake mix!

RECIPE: Easy Cake Mix Christmas Cookies
makes about 24

INGREDIENTS:

  • 1 box of yellow cake mix
  • 2 eggs
  • 1/2 cup vegetable oil
  • food coloring and sprinkles (optional)

METHOD:

  • Preheat oven to 350 degrees F. Prepare cookie sheets or sheet pans with a Silpat or parchment paper.
  • Put cake mix, eggs, oil, and food coloring (if using) in a mixing bowl. Beat with a paddle attachment or mix with a wooden spoon until well-combined and shiny.
  • Form balls with about a Tablespoon of dough and drop onto the prepared cookie sheets. Bake for 10-13 minutes. Cookies may not be brown on top, even if they are brown on the bottom – so use a spatula to peek underneath.
  • Add sprinkles while hot. Let cool and eat. (They may be puffy when you first take them out, but they will flatten and firm upon cooling.)
