I had never thought of blueberries going upside down, but then it hit me – why the heck not? And while we’re at it, why not punch them up in a cake spiced with cinnamon, ginger, cardamom, vanilla, and cloves?

{recipe} Cherry Almond Upside Down Cake

I think the planets must be mis-aligned or something, because I’m kind of a cherry hater and yet this is my second cherry-focused recipe in a row. True, the last one involved ground lamb where this one involves sweet, sweet, caramel, so clearly they are pretty different in all aspects.

If you’ve been paying attention, you’ll know that I’m a big fan of the gooey, sticky, butter-and-sugar-based fruit upside down cake (I refer you to the Pear Ginger Upside Down Cake, Caramel-y Banana Upside Down Cake and Apple Upside Down Cake of yore.) Here’s the reason: an upside down cake is a pretty quick and easy dessert that self-sauces, tastes delicious, and generally impresses guests.

{recipe redux} Pear Ginger Upside Down Cake

A few weeks ago I posted about this Banana Caramel Upside Down Cake. I made it again recently, but instead of bananas I upside downed pears sliced on a mandoline, put some orange zest in the caramel, and used whole wheat pastry flour instead of white flour.

Divine! Although I did dump it out and realize it wasn’t done yet, so I had to re-upside-down it, cook it some more, then re-un-upside-down it. It worked surprisingly well in the end although there was a period of severe swearing that involved liquid hot caramel magma all over the kitchen and my pants, but the cake looked good after all that so no big deal in the end.

{recipe} Caramel-y Banana Upside Down Cake

This is a pretty easy cake that was inspired by a delicious, gooey pear-ginger cake we used to make at Rose Pistola. I had no recollection of the recipe so I made a few attempts and came up with this excellent facsimile of the original cake. Of course, it doesn’t have to be made with bananas, you can use another kind of tasty fruit like peaches, mangoes, pears, plums, or apples. You can get creative with adding citrus zest, toasted coconut, or chopped nuts into the batter as well.

My mom calls this an apple cake-pie, but I don’t know why. She has been making it since I was a kid. It’s delicious! The hardest part is peeling and cutting the apples, which I hate. I mean, really hate it. Like, if you want to come over and peel and cut the apples I will make you this cake and we can each eat half!

{make this} Chocolate Guinness Cake from Simply Recipes

This might be the perfect chocolate cake recipe – deep and rich, not too sweet, not at all dry, and sturdy enough to transport easily. The cream cheese icing gives it the perfect boost of sweetness. And no, it doesn’t taste at all like Guinness, but I think the combination of melted butter, sour cream, and beer add to the moist crumb. {recipe} Homemade Hostess Cupcakes

My friend Laura likes chocolate cupcakes with vanilla frosting. I told her husband I would surprise her with a very special version of that flavor combination so I made her some homemade Hostess cupcakes. These are fun because they look like a boring chocolate cupcake with shiny glaze, but they have a surprise inside- a big yummy blob of vanilla frosting!
